Coffee evolved as an understory plant, traditionally cultivated beneath a canopy of taller trees. In many regions, production intensified with a shift toward sun-grown systems that removed shade trees to increase light exposure.

The Smithsonian Migratory Bird Center has studied shade-grown coffee for decades and developed Bird Friendly certification, which requires 100 percent organic and shade-grown standards. Their research indicates these farms can provide habitat for birds, mammals, and insects while protecting soil, supporting pollination, and storing carbon.

In India's Western Ghats, a global biodiversity hotspot, coffee estates in districts such as Kodagu often lie between forest fragments, protected areas, and villages. These canopies support species including Malabar barbets, hornbills, drongos, sunbirds, and forest-dependent birds such as the Nilgiri wood pigeon and Alexandrine parakeet.

Mammals such as civets, giant squirrels, porcupines, and wild cats also move through estates near forests. Researchers emphasize that plantations cannot replace natural forests but can serve as connective habitat in fragmented landscapes.

A 2017 study of 25 robusta agroforests in Kodagu by researchers from Zurich and India found that farms dominated by a single shade-tree species, commonly silver oak, had sharply reduced tree diversity. This simplification was associated with poorer coffee production, smaller bean size, and increased coffee berry borer attacks across varied rainfall and management systems.

The study suggested diverse canopies may support farm productivity by hosting pollinators, natural pest-control organisms, and nutrient cycling, while buffering climatic extremes. Researchers acknowledged economic pressures driving intensification and noted conservation cannot rely on growers bearing costs alone.

A 2018 study in Nature comparing arabica and robusta farms in the Western Ghats found arabica farms had higher habitat-specialist diversity and were more profitable in the study, while robusta farms supported similar or slightly higher abundances of specialists where dense canopy and forest cover existed at the landscape level.

The findings indicate that landscape context and farm management can be as important as the coffee species itself. Diverse native-tree canopies create varied food, nesting sites, and shelter across vegetation layers, whereas single-species commercial tree cover does not provide equivalent ecological relationships.
